Tell us three things
The occasion, the number of people, and one flavour the person actually likes. Not a photograph — see the journal for why. Three sentences is enough to start.
What we will quote
A price and a date, usually within a working day. Custom work starts at about the price of the equivalent size from the list and goes up with the amount of hand work rather than with the number of tiers.
How much notice
Two weeks for anything structural, four days for a variation on something we already make. In December, three weeks for everything, and we stop taking orders for the 24th and 25th around the 10th.
What we will say no to
Fondant sculpture, copies of another kitchen’s work, and anything that has to be assembled on site. We are not being difficult; those are three things we are not good at.
